ASIAN INSPIRED VEGGIE BOWL WITH @SAMMYDEATS

Ingredients:
Bowl:
1/2 cup jasmine rice
1 cup AeroFarms Micro Rainbow Mix
1/2 cup chopped red bell pepper
1/2 cup chopped carrots
1/2 cup edamame
1 tbsp cashewsSesame seeds, to top
Creamy Asian dressing
Creamy Asian Dressing:
1/4 cup Sir Kensington’s vegan avocado oil mayonnaise
1/8 tsp garlic powder
1 1/2 tsp sesame oil
1/2 tsp rice wine vinegar
1 tsp coconut aminos or soy sauce
1 tsp maple syrup
Instructions:
- Cook rice according to package instructions
- Make the dressing by mixing all of the ingredients together and set aside
- Add the rice to the bowl
- Layer on the micro greens
- Add the chopped bell pepper, carrots, and edamame
- Drizzle the creamy Asian dressing on top to your liking
- Top with cashews and a sprinkle of sesame seeds. Enjoy!
