  • RED, WHITE, AND BLEU BURGER

  • INGREDIENTS
    Serves 4
    2 lbs. ground beef chuck

    1 large shallot, finely chopped

    1 egg

    3 tbsp. of Sir Kensington's Classic Ketchup

    1 cup blue cheese

    2 tbsp. kosher salt

    Freshly ground black pepper
    4 brioche buns

    Sir Kensington's Classic Mayonnaise

    Tomato, red onion, pickles, and arugula to garnish
  • PREPARATION
    1) Incorporate chuck with shallot, ketchup, egg, salt and pepper. Mix gently.

    2) Divide mixture into eight mounds. Pat mounds into four inch patties. Keep the image of a perfect burger in mind.

    3) Take one mound and top with ¼ cup of crumbled blue cheese. Place a second mound on top, patting it onto the other patty to enclose the cheese.
    Pinch and seal into a single patty. Repeat for remaining three patties.

    4) Grill patties, turning over once, until cooked through and still pink in the center.

    5. Place patties into buns and top with garnishes, a dollop of Sir Kensington's Ketchup and Mayonnaise.

    6) Share with friends and family.

  • SAUTEED SPICED SHRIMP

  • INGREDIENTS
    Serves 4
    l lb shrimp - peeled and deveined, tails left intact

    2 cloves minced garlic

    ½ cup thinly sliced onion

    ½ tsp corn starch

    1 tbsp salt
    1 tbsp cooking oil

    1 tbsp finely chopped basil leaves, with additional sprig for garnish (optional)

    2 tbsp Sir Kensington's Gourmet Scooping Ketchup
  • PREPARATION
    1) Soak shrimp in cold water with l tbsp salt for 10 minutes.

    2) Drain water and refrigerate for 1 hour.

    3) Lightly coat shrimp with corn starch.

    4) Heat oil and brown garlic.

    5) Add sliced onion and stir fry shrimp until pink for about 2 minutes.

    6) Add Sir Kensington's ketchup, chopped basil and mix well for ½ min.

    7) Garnish with basil sprig and serve immediately.

  • KALE CAESAR

  • INGREDIENTS
    Serves 4
    Dressing:

    ½ tsp. mustard

    1 clove garlic, pressed

    ½ tsp. Worcestershire sauce

    1 oil-packed anchovy fillet, mashed with fork

    1 tbsp. lemon juice

    ¼ cup olive oil

    1 pinch red pepper flakes

    2 tbsp. Sir Kensington's Classic Mayonnaise



    Salad:

    1 bunch kale, rough cut

    1 oz. Parmesan cheese, shaved

    2 tbsp. pumpkin seeds, toasted

  • PREPARATION
    1) Add pressed garlic to lemon juice and let sit for 10 minutes to mellow the garlic flavor.

    2) Prepare the dressing. Whisk all dressing ingredients together except oil. Gradually whisk in ¼ cup oil. Season with salt and pepper to taste.

    3. Toss dressing with kale. With clean hands, massage the dressing into the chopped kale, squeezing gently as you go. Let the kale sit and soften.

    4) Garnish with toasted pumpkin seeds, shaved Parmesan, and croutons. Serve and enjoy!

CHIPOTLE MAYONNAISE

  • INGREDIENTS
    Serves 4
    Tacos:

    1 tsp. ground cumin

    1 tsp. ground coriander

    ½ tsp. smoked paprika

    ¼ tsp. ground red pepper

    ⅛ tsp. salt

    ⅛ tsp. garlic powder

    1-½ lbs. red snapper fillets

    8 (6") corn tortillas

    2 cups cabbage, shredded

    Crema:

    ¼ cup green onions, thinly sliced

    ¼ cup cilantro, chopped

    6 tbsp. Sir Kensington’s Chipotle Mayonnaise

    1 tsp. lime zest

    1-½ tsp. lime juice

    1-½ tsp. lime juice

    1 tsp. lime zest
  • PREPARATION
    1) Preheat oven to 425° F. Combine crema ingredients in a bowl, mix evenly and set aside.

    2) To prepare tacos, combine cumin, coriander, paprika. red pepper, and garlic powder. Sprinkle spice mixture evenly over both sides of fish fillets.

    3. Place fish on a baking sheet coated with cooking spray.
    Bake at 425° for 9 - 10 minutes or until fish flakes easily. Place cooked fish in a bowl and break into pieces.

    4) Heat tortillas on stovetop and divide fish evenly among them. Top each with ¼ cup shredded cabbage and 1 tbsp. crema.
